When Katy was diagnosed with celiac disease and told that her body couldn’t process gluten in 1982, the world was a very different place than it is now. Plenty of people had no idea what gluten even was, and gluten free alternatives certainly weren’t as widely accessible as they are today.
Katy loved baked goods and was determined not to let her diagnoses impede her from enjoying her favorite breads and brownies. Back then, she couldn’t just pop into the nearest bakery and hope they had a gluten free option (or trust that flours wouldn’t cross contaminate), so she was faced with one option: learn to bake all of her favorites without gluten, and make sure they tasted just as good as any glutenous option.
So she started baking up a storm, experimenting with seasonal ingredients to make sure that her bakes always tasted as good as, if not better than, the “real thing.” Her husband, Dan, became her co-taste tester, and very quickly began preferring his wife’s bakes to glutenous alternatives.
Dan realized that he was also feeling more energized and overall healthier after omitting gluten from his diet at home. When their three children were born with gluten sensitivities, the family decided that other folks dealing with gluten intolerances -- and anyone at all who wanted a delicious cookie or freshly baked loaf of bread -- should have access to their delectable gluten free treats. And so Mrs. Bickel’s Bakery was born!
